How do I use powder instead of bars of cocoa?

It's easy to substitute cocoa powder for baking chocolate. I do it all the time with tasty results!

If your recipe calls for...

unsweetened chocolate use three level tablespoons of cocoa and 1 level tablespoon of margarine, oil, or shortening for each ounce of chocolate.

sweet chocolate use 2 1/4 level teaspoons of cocoa, 1 level tablespoon plus 1/4 level teaspoon of sugar and 2 level teaspoons of margarine, oil, or shortening for each ounce of chocolate.

semisweet chocolate use 1 level tablespoon of cocoa, 3 1/2 level teaspoons of sugar and 2 level teaspoons of shortening, margarine, or oil for each ounce of chocolate.

Be sure to use natural cocoa powder instead of dutch cocoa. Natural retains more of the healthy antioxidants.
